I have fallen behind on my posting schedule, as I've been caring for a sick baby while fighting a cold myself. When you put your child in daycare and people warn you that they will bring all sorts of germs home, believe them!
Since I've been too under the weather to get out and about, my friend and co-worker, Katie, offered to share her latest coupon experience with the blog. Katie works as the Digital Marketing Specialist at Valpak, but like me, she doesn't discriminate when it comes to coupons- she just likes to save $. Here is her guest blog post about the Buy One, Get One 1/2 OFF coupon she recently used at Los Tarascos, her favorite Mexican restaurant in town.
You have a lot of options when you’re craving Mexican food here in Fort Collins. I mean… a lot. I prefer Los Tarascos on College. It’s my absolute favorite. However, nothing can beat The Rio’s margaritas, am I right?
My friend and I try to get together for lunch once a month and we typically search for coupons to help us decide where to do go. While coupon searching for this particular lunch date, I was hoping to find one for Los Tarascos and hit gold when I found this coupon from Hot Spots http://bit.ly/1eZBxBr.
Now, if you’re unfamiliar with Los Tarascos be sure to try the white habanero sauce (on ANYTHING you get) when you visit. It’s delicious! We met on our lunch hour and were in and out within the hour, an important consideration when you’re trying to eat out on a work day.
Although we were there for lunch, my friend and I ended up ordering off of the dinner burrito menu, and our waitress was kind enough to let us use the buy 1 dinner, get 2nd half off instead of the lunch coupon.
Another reason to immediately print this coupon and run to Los Tarascos, is that they claim to have the best salsa bar in town. You have unlimited access to the salsa bar with over 10 salsas to choose from. I always get the hot cilantro and the mild guacamole inspired salsa, but I admit I haven’t tried them all (some are quite hot)!
All in all, I recommend this place with or without a coupon but if you’re skeptical about trying different Mexican in town use a coupon, what do you have to lose?!
A lot of people go crazy for Halloween; they go ALL out. I however, am not one of those people. I’m still a little traumatized from disappointing Halloweens of the past.
When I was a little kid, the years I wanted to show off my costumes the most, were the years winter came early to Wyoming. My dad would force me to cover up my beautiful princess and Barbie ensembles with an ugly snowsuit, boots, and a ski mask. I’d shiver as bigger kids pushed me out of way for their turn at candy, and when I’d finally get up the door, the homeowner would comment on what a cute little boy I was. My brother and I would head back to the house, but only when he was good and ready. He’d inevitably steal much of my hard-earned candy, and I would end the night crying over my lost Pixie Sticks and Smarties.
When I got a little older (4th- 6th grade), I boycotted store-bought costumes entirely because I wanted to be different from everyone else at school. I also resisted my grandma’s offers to make me a costume, because I was too old to be “cute”. That always left me to be something weird and unrecognizable. I wasn’t winning any Best Costume contests and I wasn’t ok with that.
Despite the fact that Halloween was never my favorite holiday, I vow to make it an enjoyable holiday for my daughter. She’s too young to care this year, but I am starting to pay more attention to the happening Halloween events in town and have a few deals for those of you who do love Halloween and/or have kids old enough to appreciate the fun:

My husband and I reached an important milestone last Thursday: We left the baby with a babysitter who is NOT related to one of us. Considering we don’t get out much without the baby, you’d think we’d use the opportunity to spend the time together on a romantic night out. Instead, we decided to use the time to catch up on some “It’s all about ME and ONLY me time”. I decided to use my “Me” time with my best girlfriend who I feel like I never see anymore, and Joe decided to spend some alone time participating in one of his favorite activities: buffet dining.
One of Joe’s favorite buffets in town is at Mt. Everest Cafe, located near Drake and Shields. Mt. Everest Cafe is interesting because it serves up authentic dishes from Nepal and Tibet. If you’re skeptical of it’s authenticity, don’t be, it’s straight up sherpa-owned and operated! The cafe does offer a full menu HERE, but if you’re not familiar with the cuisine, the buffet may be a better choice, so you can sample a little bit of everything.
I like Mt. Everest Cafe and accompany Joe there sometimes, but Joe loves it, just like he loves most ethnic food. He spent his high school years in Jakarta, Indonesia and misses the Indonesian specialities he used to buy from the food carts in the city. He is always on the lookout for new… culturally diverse eateries and first discovered Mt. Everest Cafe through a coupon in Valpak. He always makes sure to fish their coupon out of the pack and this is the coupon he took in on Thursday:

Joe got $2 off his dinner buffet ($13.95 before discount), and filled several plates, so I know he got his money’s worth. I knew I wanted to blog about his dinner out, so I told him I needed him to take a picture to show everyone how great the food looks. But you should understand something about my husband, he is not one of those people who likes to take pictures of his food at artsy angles. After a little nagging (which always works), he did take a picture, and when he texted it to me he said,
“I took a pic of the food and felt incredibly stupid doing it. That is love right there.”
His text made me laugh out loud. I appreciate the photo because I know he feels like a jackass snapping photos of food while he’s eating alone, but I also appreciate that he made sure his plate looked tidy for the photo! I’ve seen how he piles food on his plate at a buffet, and it never looks this appetizing nor does it usually include so many vegetables.

Before I begin my post though, please note that I have not been paid to say good things about the Butter Cream Cupcakery; I just genuinely love it.
The Butter Cream Cupcakery is a personal favorite of mine. I love the idea of a shop dedicated to cupcakes because its perfect for all of my dessert needs. I can stop in for a single treat when I’m craving something sweet (they have mini-cupcakes if I’m feeling guilty), I can order a dozen for a co-workers birthday, or I can place a specialty order for a party or wedding (which I did for my wedding in 2010). They also have two convenient locations: their main store located on College and Horsetooth and a smaller shop in Old Town on College and Laporte, next to Starbucks.
The Cupcakery has a huge variety of flavors (see full list HERE), so many that they have a special “surprise” flavor every day and “daily special” flavors that recur each week. I make sure to follow the shop on Facebook to keep up on their surprise flavors, but you can also check their website. The flavors can get a little crazy, like Piña Colada and Sweet Potato, but they offer five classic cupcakes every day in addition to their “daily special” and “surprise” flavors: Vanilla Bean, Chocolate, Red Velvet, Chocolate on Vanilla, and Vanilla on Chocolate.
The day I went in with my BOGO coupon (exclusive to the Fort Collins Coupons & Dining Book, and valid at both of the Butter Cream Cupcakery’s locations), the “surprise” flavor of the day was banana. Mmmmm! I like the vanilla on chocolate, but I ended getting two banana cupcakes.
If you’ve got a craving for something sweet, I’d definitely recommend heading down to the Cupcakery with or without a coupon. Meet a friend for a cupcake and coffee, or take the kids out for a treat (they have Princess Storytime at the Horsetooth every Thursday at 1).
